Shrimp Orzo

I tried this lemon feta orzo recipe from The Modern Nonna and it was so good!

Fresh. Bright. Creamy. Light. The kind of meal that tastes like summer on a plate.

What I loved most was how simple it was while still feeling layered and full of flavor. The lemon keeps everything fresh, the feta adds just the right amount of saltiness and creaminess, and the dill completely brings it to life.

I added shrimp to ours and it worked perfectly.

This is the kind of dish you make once and immediately know you’ll make again.

Ingredients

  • 1 cup orzo

  • ¼ cup olive oil

  • Juice and zest of 1 large lemon (about 1/4 cup juice)

  • ¼ cup fresh dill, finely chopped

  • 2 tablespoons honey Dijon mustard

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • ¼ cup feta cheese

  • 10 large shrimp

Method

  1. Cook the orzo according to package instructions and drain well.

  2. In a bowl, whisk together the olive oil, lemon juice, lemon zest, dill, honey Dijon mustard, salt, and pepper.

  3. Reserve a few tablespoons of the dressing for the shrimp.

  4. Coat the shrimp and cook it in the airfryer (follow your airfryer timings).

  5. Toss the cooked orzo with the dressing until well coated.

  6. Add plenty of crumbled feta and mix gently.

  7. Serve the shrimp over the orzo and top with extra feta if desired.

Fresh, flavorful, and honestly so delicious.
