A Shish Tawook Lunch
Iām always looking for meals that tick a few boxes.
High in protein. Full of flavor. Easy to make. And most importantly, something the entire family enjoys.
This lunch managed to do all four.
I made a batch of shish tawook using a recipe adapted from Every Little Crumb, paired it with yellow rice inspired by Weekday Pescatarian, and served it alongside a simple salad of chopped tomatoes, cucumbers, lemon juice, and salt.
The result was one of those meals that looked like it required far more effort than it actually did.
What surprised me most was how well the chicken turned out in the air fryer. Shish tawook is traditionally grilled, but the air fryer gave it those beautiful charred edges while keeping the chicken incredibly juicy inside.
The chicken cooked for 20 minutes in the air fryer, flipped halfway through, and came out tender, flavorful, and perfectly cooked.
The yellow rice was the perfect companion. Warm, fragrant, and comforting without stealing the spotlight. And the salad brought exactly what it needed to the plate. Freshness. Acidity. Crunch.
Sometimes the simplest meals are the most satisfying.
No complicated techniques. No hard-to-find ingredients.
Just good food that tastes great and leaves you feeling full for hours afterward.
