My Take on the Nicoise Salad

(Mar 9. 2015) This is one of the prettiest salads I ever made.  It looks and tastes fresh, and is a definite crowd pleaser.

This salad has a lot of preparing so bear with it.  However, the end results are so pretty.

Here's what you need:

  • 2 eggs, hardboiled (here's a tip on how to achieve the perfect hardboiled egg)

  • 7 baby potatoes, boiled (here's a tip on how to immaculately boil potatoes)

  • 1 cup green beans, blanched (here's a tip on blanching)

  • 1/4 cup chopped green olives

  • 1 cup baby tomatoes, cut in half

  • half a bunch of parsley, roughly chopped

  • 1 can tuna (in brine)

  • 2 cucumbers, insides removed and thinly slices

  • 1 packet mixed greens

The assembly is as easy as the below:

The dressing is so refreshingly delicious.  You'll need the following:

  • 2 shallots (3 if you want it chunkier)

  • 1/4 cup vinegar

  • 1/4 cup lemon juice

  • 2/3 cup olive oil

  • 1 teaspoon salt

  • 2 teaspoons Dijon mustard

  • 1/2 teaspoon freshly ground pepper

Put all ingredients in a hand-held blender and blend until emulsified.

Drizzle all over and enjoy!
