S is for Saloona
Saloona is probably my kids' second favorite dish, after molokhiya. To some this may sound like complete and utter gibberish.
Allow me to elaborate. This is saloona:
I am not sure where the term "saloona" came from, but it is basically a thick and hearty stew that is cooked on low heat for a few hours. The result, fall-of-the-bone meat soaked in an explosion of flavor and perfectly cooked vegetables.
I serve it with brown rice and a wedge of lemon.
