Green Hummus

(Sep 14, 2014) This is so deliciously refreshing and an interesting twist to the classic hummus. The ingredients are pretty unorthodox, except for the chickpeas.

The ingredients are:

  • 1 avocado

  • 1 cup fresh spinach leaves

  • 1 can of chick peas, drained and rinsed with water

  • 1 bunch parsley, stems off

  • 2 cloves of garlic

  • Salt

  • Juice of 2 lemons

  • 2 tablespoon olive oil

  • 1 cup greek yogurt


Directions:

  1. Mix all in a food processor.  If the consistency is too thick for you, drizzle in some additional olive oil.

  2. Refrigerate until ready to serve with toasted pita bread.

  3. Enjoy!
