Pumpkin Loaf

(Jun 2, 2014) What does one make with pumpkin puree?  Well - there aren't that many options but pumpkin loaf is a nice twist to the usual pumpkin pie or pumpkin cupcakes.  This recipe is fail- and fool-proof and the end results warm your tummy and remind you of when the weather was much cooler.

You will need the following:

  • 1 cup sugar

  • 1 cup oil (I use Noor Oil)

  • 2 eggs (few drops of vinegar)

  • 1/2 teaspoon vanilla

  • 1 cup all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 teaspoon all-spice (make sure this is for desserts and not savoury food)

  • 1 cup pumpkin puree (alternatively, you could use fresh pumpkin that is steamed and pureed)

  • 1/2 cup chopped pecans

Dirctions:

  1. Preheat your oven to 170.

  2. In a big bowl, mix sugar and oil.

  3. Add eggs and vanilla.

  4. Sift flour, baking soda, baking powder, salt, and all-spice.

  5. Spoon in flour mixture until well-incorporated.

  6. Add pumpkin puree.

  7. Add pecans and mix gently.

  8. Bake for 45 minutes (or until done) and enjoy.
