Chocolate Chia Pudding

This pudding is the answer to your sweet tooth cravings.  It's simple to make and oh-so-good.


Goes without saying how good chia is for you. But for those of who unfamiliar with this superfood. Here's some background: chia is the ancient Mayan word for 'strength'.  The plant grows natively in South America and was vital to the Aztecs and Mayans.

The nutritional value is ridiculous.  1 ounce of chia seeds contains:
11 grams of fiber
4 grams of protein
9 grams of fat out of which 5 are Omega-3s
Manganese - 30% of the recommended daily allowance
Magnesium - 30% of the recommended daily allowance
Zinc, Vitamin B3, Potassium, Vitamin B1 and Vitamin B2

Chia seeds are whole grains, they are grown organically, and are free of gluten.  Chia seeds are loaded with antioxidants.  They are a great source of fiber and because of that, they can absorb 10-12 times their weight in water.  That said, they are extremely hydrating and are the perfect snack to have as suhoor during the holy month of Ramadan.  They become gel-like and expand in your stomach, making you feel fuller (and helps you eat less!).  There are a ton more benefits found here.

Luckily, they are now readily available in supermarkets around Bahrain (and the world) so they are very easy to find.

The ingredients are jampacked with goodness:

1/4 cup chia seeds
1 cup almond milk
2 tablespoons agave nectar
1 teaspoon vanilla extract
3 tablespoons cacao powder
2 teaspoons espresso powder (dissolved in a splash of water)
Optional: cacao nibs to decorate

Mix all ingredients.  Refrigerate.  Eat when set and make sure to scrape the bowl real well!
