What does one make with pumpkin puree? Well - there aren't that many options but pumpkin loaf is a nice twist to the usual pumpkin pie or pumpkin cupcakes. This recipe is fail- and fool-proof and the end results warm your tummy and remind you of when the weather was much cooler.
You will need the following:
- 1 cup sugar
- 1 cup oil (I use Noor Oil)
- 2 eggs (few drops of vinegar)
- 1/2 teaspoon vanilla
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon all-spice (make sure this is for desserts and not savoury food)
- 1 cup pumpkin puree (alternatively, you could use fresh pumpkin that is steamed and pureed)
- 1/2 cup chopped pecans
In a big bowl, mix sugar and oil.
Add eggs and vanilla.
Sift flour, baking soda, baking powder, salt, and all-spice.
Spoon in flour mixture until well-incorporated.
Add pumpkin puree.
Add pecans and mix gently.
Bake and enjoy.
